Arabian dajaj kabsa Rice (Arabian chicken Biryani) by chef nikk
SPECIAL RECIPE FOR YOU BY CHEF NIKK
DAJAJ KABSA RICE ( ARABIAN CHICKEN BIRYANI) BY CHEF NIKK

Ingredients
Chicken - 1 kg
Rice - 2 cup
Onion -2 chopped lengthwise
Tomato puree-½ cup
Ginger-Garlic paste - 1 tbsp.
Water - 4 cups
Salt - to taste
Green Chilies -3
Oil- ¼ cup
Ghee-2 tbsp.
Cinnamon stick - 1 inch
Cloves -5
Cardamom - 3
Pepper-½ tsp
Kabsa masala powder - 1 pocket
Chicken Stock Cubes-1
Dried Lemon -1
kabsa sauce :
Onion-1
Tomato-1
Greenchilli-3
garlic-2
Salt - to taste
Lemon juice- 1 tsp

Cooking Method
STEP 1
Wash and soak kabsa rice for 30minutes.
STEP 2
Take a bowl and add cleaned chicken
STEP 3
Add red chili powder
STEP 4
Add salt and mix it well
STEP 5
Cover the bowl and marinate for at least 1 hour
STEP 6
Heat a pressure cooker and add oil.
STEP 7
Add marinated chicken and sauté for few minutes and keep it aside.
STEP 8
Add oil
STEP 9
Add ghee
STEP 10
Add Cinnamon stick
STEP 11
Add Cloves
STEP 12
Add Cardamom
STEP 13

onion and sauté it well
ginger garlic paste and sauté it well
tomato puree and mix it well
turmeric powder
kabsa masala powder

Add the chicken stock cube and mix it well
Add fried chicken and sauté it well
Add water
Add dried lemon
Add salt and mix it well
Add soaked rice and mix it well
Cover the lid and cook for 3 whistles.
Once pressure releases, fluff it carefully without breaking the rice.
Take a bowl and add chopped onion
tomato
garlic
green chili
salt to taste
lemon juice and grind smooth paste

Serve it hot with tarator sauce
